HEALTHY HANGOUT
Miami is on a major veggie kick these days. Last week, we featured Todd Ericksons new vegan eatery, GLAM, on the mainland. Now Soul Tavern, the citys first vegetarian gastro-pub, comes to South Beachs Sunset Harbour. Its founder, a Chinese medicine practitioner and acupuncturist, based the menu on the ancient Chinese theory of the five elementswood, fire, earth, metal and waterto balance health. They appear as themed salads, such as Earths mix of chickpeas, pickled squash, ginger and corn with mulberry maple hibiscus dressing. He custom makes dozens of Chinese herbal elixirs to help with specific ailments; they may be added to a variety of hot and cold beverages. But being a pub, theres also a full bar from kombucha cocktails to pinot noir on tap.
