Swedish Surprise

Noble House Hotels & Resorts, whose portfolio boasts upscale properties from Little Palm Island in the Florida Keys to Mountain Lodge at Telluride, renovated and expanded its Pelican Grand Beach Resort in Fort Lauderdale with some serious Scandinavian flair. Room dcor touches on beach shabby chic through rustically painted walls in pale hues and pops of printed textiles. Book the recently added Sky Suite, the 12th-floor penthouse, for its 1,100-square foot balcony with an outdoor shower and soaking tub. Perched a floor below for sweeping ocean views, the new PURE Spa uses only the best product lines such as Babor and Sparitual. Try its Maria Akerberg Luxury Facial with the namesake skin-care line straight from Sweden. The settings minimal design with whitewashed wooden floors extends to cabanas for outdoor treatments.

The Betsy has been busy. The boutique hotel reinvented BLT Steak as LT Steak & Seafood to celebrate its oceanside locale. Executive chef Laurent Tourondel adds dishes like poached Alaskan king crab dipped in yuzu butter, and grilled Ora king salmon served with a summer bean salad and confit lemon aioli (pictured). Red meat eaters still have their share of options, too, including a new short rib bao bun with pickled jalapeno, chimichurri and watercress. Save room for his gourmet version of tres leches and rum raisin ice cream topped with chili confit pineapple. Meanwhile, the property is in the midst of a major expansion and renovation with the adjoining Carlton Hotel. The Henry Hohauser-designed Art Deco annex will feature 69 suites and rooms, a casual restaurant and an herb garden.

Whether made with smoked Japanese cedar or sake basil granite, cocktails for the optional pairing appear equally creative.
